Some days it's a challenge for us to get little miss to eat breakfast. She's always been like this. Even so it can be frustrating to try and find something that she will eat for breakfast. She sometimes asks for pancakes for breakfast, super simple and easy to make. I think half the fun is that she gets to help make the batter, and then spread the honey on top.
Now that we're travelling full time, we've had to adjust what we cook. Luckily pancakes cook up really well in our electric fry pan, or on the stove top if we're using the cook top.
Ingredients:
1 cup self raising flour
1 cup milk
2 small ripe bananas
Butter
Method:
Mash the bananas.
Add the milk and flour and mix thoroughly.
Heat a small amount of butter in a fry pan.
Pour the batter into the fry pan ( we make mini pancakes about 3 tablespoons of mixture per pancake).
Once the batter had almost dried on the top then I flip them.
Wipe out the fry pan with some paper towel and repeat cooking until the batter is cooked.
Add your favourite toppings (we like honey).
This makes more than enough pancakes for us for breakfast. You can substitute an egg for the bananas if you don't have then.
