Camp Cooking - Cheesy Tuna Fritters

 


I love how easy these fritter are to make and you can easily adjust the recipe to make more or less. I use the basic recipe of 1 egg, 1 cup of milk and 1 cup of flour. It makes it easy to double the recipe if I want to make more. For thicker pancakes I use a little less milk and for thinner pancakes I use a little less flour. 

You can also add any kind of veggies that you want. Often I added grated zucchini, grated carrot, corn, peas, chopped up bacon or ham. It's completely up to you.


Ingredients:

1 teaspoon minced garlic 

1 egg 

A good splash of milk (about 3/4 of a cup)

A good sprinkle of self raising flour (about 3/4 of a cup)

Small carrot grated 

95g of tin tuna (we used puttanesca)

125g tin corn 

Small amount of spring onion cut finely 

1/2 cup of grated cheese


Recipe:

Mix all the ingredients together in a bowl until all the lumps are gone
Heat a frypan on the stove with a small amount of butter
Add a small amount of batter and cook flipping once
Repeat

I make them up and put them in the fridge to pack for lunches or snacks. They only usually last a day or so in the fridge because they're so delicious.
