This is a different kind of recipe that I came up with. Surprisingly the pineapple was a nice addition to the chicken.
Serves 2-4
Ingredients:
1 tablespoon oil
500g chicken breast sliced
1 can of condensed tomato soup
1 sachet of tomato paste (about 1-2 tablespoons)
1/2 cup water (additional may be needed)
1 can pineapple chunks (juice drained)
1 medium carrot sliced
1 capsicum sliced
4 sticks of celery chopped
1 onion diced
1 cup rice
Method:
- Add oil and onion to the pan, cook until fragrant
- Add chicken, cook until browned
- Add the vegetables and cook for a few minutes
- Add the soup, tomato paste, pineapple, water and rice
- Cook until liquid thickens and rice is cooked (add extra water if the rice is crunchy)
