This recipe is one of the easy recipes, and you can make as many or as few as you like. The ingredients can also be substituted to what you have on hand.
Sometimes we add capsicum or sprouts but today I just made them with what we had. I also like to make this recipe when we need to use up the last little bit of a roast chicken..
Serves 2-4
Ingredients:
Roast chicken shredded
Rice paper
Vermicelli noodles
Grated carrot
Cucumber batons
Avocado
Beetroot relish
Method
- Cut, grated or mash all ingredients into little bowls
- Soak Vermicelli noodles until tender and cut into smaller portions, remove from water and cool
- Soak 1 sheet of rice paper in a shallow dish at a time (font leaves them too long or they go soggy)
- Place the rice paper on a flat board
- Add your toppings
- Add any sauce you want (we used the beetroot relish today)
- Fold the top and bottom of the rice paper over
- Fold the right side and then roll to close the last end
