Before we even set off on our trip the question of what would we make for dinner came up. I like to think that we have a pretty good setup. When have 4 gas burner stove cook top all built into our slide out kitchen. Mrs Meddler and Mr Butinski did save us with the addition of the electric toaster and kettle (we had gas kettle only) for when we're plugged in at a caravan park. Again something we hadn't given a lot of thought to. They also suggested an electric fry pan. We have used the electric fry pan so much since leaving. I love it, Jamie prefers gas cooking (that's the chef in him). We have no oven or microwave (it's amazing how much you use them when you have them), unless there are those facilities in the camp kitchen.
Our grocery bill has increased since leaving so we are conscious of budget friendly meal ideas that can be made with the cooking facilities we have. With all that in mind one simple and easy meal that was loved by all (little miss said it was her most favourite dinner ever) was nachos.
Ingredients:
200g mince
1 medium onion
Splash of oil
140g tomato paste
Taco seasoning
some water
1/3 pack of cherry tomatoes diced
4 bean mix
1 pack tortilla chips
Sour cream
Cheese
Avocado
Recipe:
Fry the onion in the fry pan with the oil for a few minutes.
Add the mince and cook until brown.
Sprinkle the taco seasoning over the mince, I used about 1/3 of a pack you can adjust according to you preference.
Add some water and mix, I added about 1/2 to start with and then a bit more later.
Add the tomato paste and mix (you want it to be a bit wet).
Add the diced tomatoes and the tin of beans.
Cook until the sauce has thickened and hot.
To assemble:
We added tortilla chips to our bowls, then the meat and beans, then grated cheese, then some avo and sour cream to top them off.
It was surprisingly filling and we had lefts overs.
